20 minute Baked Salmon with Avocado sauce on rice

 

 

Ingredients for 2-3 servings

For the salmon:

Salmon Filet

Garlic Oil from our Crispy Garlic Oil

Salt & Pepper

Sliced lemon

For the avocado sauce:

2 Avocados

½ Yellow Onion

Handful of Kale

Salt & Pepper

2-3 tbsp Olive Oil

For plating:

 Cooked rice or any greens of your choice.

Steps:

For the salmon:

  1. Preheat oven to 400 C
  2. On a baking tray lined with wax paper put your salmon on and brush the Garlic oil on.
  3. Season with Salt & Pepper
  4. Lay your lemon slices on top
  5. Once oven is heated to 400 C bake the salmon for 12-15 mins till desired doneness.

For the Avocado Sauce:

  1. Add in your avocados, onion, kale, salt & pepper and olive oil to a blender and blend until ingredients are combined.

Plating:

On a bed of greens or rice, spoon on a generous amount of avocado sauce. 

Add your salmon filet on top of the sauce then top it off with our crispy garlic oil or our crispy garlic chili oil if you want it spicy!
